We tried it and it ROCKS! This is a recipe Cherie posted on her blog that sounded a lot like Costa Vida's Sweet Pork Salad- even though this is a knock off from Cafe Rio, it tastes exactly like our favorite! The dressing makes a ton- like about 6 cups but I think that's what really makes this taste authentic! (we'll just freeze the rest) Here is the link if you missed it:

Adrian went the extra mile and made tortillas from scratch- they were yummy!

We just used pork carnitas (pork roast) and you just do it in the crock pot. I think the Coke is what really makes it special. I thought it wouldn't taste sweet because I could really only smell the salsa while it was cooking, but after we tasted it, it was just like the sweet pork I was hoping for and I knew it was a winner!

The dressing has some great ingredients- I just love the smell of cilantro! You could probably half the recipe. In fact we halved the pork portion too.

We added black beans like they do at Costa Vida and a few corn chips on top.

Sami and I agree that if we were to live on one dish the rest of our lives, we would pick this one. It is a complete meal and we can't imagine ever getting sick of it!

Sweet pork is definately my favorite at Costa Vida also so I was so excited when I found this recipe.
